A series of intense and emotional tasting and selection sessions –at the casks themselves– featuring Antonio Flores –González Byass’s master blender and Best Fortified Winemaker in the world– and the team of La Cala by Albert Adrià –one of the most influential Spanish chefs in recent times– have resulted in Fino La Cala, a fino wine that evokes the traditional aperitif time and made with a great respect for tradition, some flashes of creativity and, above all, passion.
Fino La Cala has a marked cosmopolitan character and preserves the essence of sherry wines. It results from the coupage of several fino wines from the González Byass cellars: from the vigorous imprint of sobretablas wines to the wealth of some finos with avant-garde touches: the search for the perfect sherry aperitif is over.
Clean, bright and of intense gold colour with some green touches, La Cala is sharp and thin on the nose, with rich memories of yeast, almond, sea and dry seaweed. On the palate it is extremely friendly, light and fresh, with a nice bitter, saline finish, perfect to accompany La Cala by Albert Adrià’s culinary proposal: a fusion of the concepts aperitif, tapa and preserve.
About González Byass
González Byass is a family winery founded in Jerez in 1835 and dedicated to the production of wines and spirits. Such well-known brands as Fino Tío Pepe, wine jewels such as Noé, Apóstoles and Brandy Solera Gran Reserva Lepanto have positioned González Byass as one of the main wineries in the world. Tradition, research, sustainability and the search for the highest quality are the pillars on which González Byass has focused its efforts, backed by almost two centuries of experience.
Throughout the last decades, González Byass has become a genuine Family of Wine, by incorporating wineries from some highly emblematic areas that faithfully represent Spain’s wine diversity.
