González Byass –the winery that loves its vines, as the motto displayed at Viña La Canariera in the heart of Estate Carrascal goes– has organised a gathering in the countryside to celebrate the arrival of wine-must.
Winemakers, gourmets and sherry enthusiasts met for a culinary day out on which must was the star. The same must that will shortly flood the Tío Pepe cellars, the same one that has recently won the Must Contest organised by the Jerez Control Board. Bright, light and fresh, this wine to-be reflects the intense easterly winds of last summer, the softness of the westerly winds and the elegant salinity of albariza soils. The nose is incredibly friendly, floral and full of life, with an acidity on the palate characteristic of musts from the Jerez countryside.
Mauricio González-Gordon, President of González Byass, spoke about some of the recent actions of the winery in its local vineyards, emphasising the strong commitment to the Pedro Ximénez variety, the replanting scheme at Carrascal and some tourism projects in the countryside. All this under the most demanding standards of quality, sustainability and environmental protection.
