Wisdom, time and "Mother Nature" have crystallised into wine gems like Palo Cortado 1987 Vintage. This sherry wonder is made from selected harvests and then made to rest in the stillness of the cellars, impervious to the passage of time, until it reaches just the right degree of fineness and elegance to be bottled by hand, directly from the cask and in very limited quantities.
Antonio Flores, the "nose" of González Byass, carefully reviews the evolution of this wine of an exceptional character. After long years of aging, this sublime Palo Cortado displays a golden amber hue and a coppery, slightly orange edge. The nose is intense and striking, with aromas of almonds and fine woods. Power, spaciousness and persistence characterise the mouthfeel of this vintage sherry wine, which explodes on the palate to linger there for long, sweet minutes.
Since its founding in 1835, González Byass has reserved a small part of each harvest for it to age as Vintage Wine. Manuel María González, founder of the winery, started this tradition, born from the curiosity of his innovative spirit. The result is a group of masterpieces that superbly represent the quality and uniqueness of sherry wines.
This vintage comes in a green case and a typical Jerez bottle, a replica of those used in the House in the mid-nineteenth century, with a classical label, a cylindrical top-quality plug and a seal of red wax. Along with the wine a document signed by Mauricio González-Gordon, President of González Byass, can be found, in which he reveals the secrets of this Vintage Wine of which only 987 bottles are produced.
